Banana Oat Bread
 
Ingredients
  • 1 cup firmly packed brown sugar
  • ⅓ cup plus 2 tablespoons canola or vegetable oil
  • 2 egg whites
  • 1 egg
  • 1⅓ cups mashed ripe bananas (around 2 large bananas)
  • 1 cup rolled oats
  • ½ cup milk
  • ¼ teaspoon banana extract
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
Instructions
  1. Preheat oven to 350 degrees. Grease a loaf pan with cooking spray and set aside. Combine the brown sugar, oil, egg whites and egg in a large bowl. Blend well and set aside.
  2. In a separate bowl, stir together the bananas, oats, milk and extract, whisking to combine. Add to brown sugar mixture, beating well.
  3. In a separate bowl, stir together the flour, baking powder, baking soda, salt and cinnamon. Add to brown sugar mixture, beating just until moistened. Spoon into the prepared pan. Bake for 1 hour and 10 minutes or until a tester inserted in center comes out clean. Cool 10 minutes in pan on a wire rack; remove from pan. Cool completely on the wire rack.
